A quick, easy and healthy recipe to make with the kids and you won't mind them eating it afterwards too :)

Vegan Baked Date Bars

Prep Time: 10 mins

Cook Time: 35 mins

Servings: approx. 16 bars


Ingredients

400g Medjool Dates

200g Raisins

100g Ground Almonds or Brazil Nuts

400g Oats

4 tbsp Chia Seeds

3 tbsp Coconut Oil

2 tsp Cinnamon

Optional: 5 tbsp Melted Chocolate Drops (dairy free or dark) for topping

Optional: Chopped banana (for serving)


Instructions

Preheat the oven to 200c

Combine the Chia Seeds with approx. 16 tbsp of water for approx. 10 mins to form a gel.

Heat the Dates and Coconut Oil in a pan until the dates are soft and then blend with 300ml water in a blender until it becomes a smooth paste.

In a mixing bowl, mix all of the ingredients with the date paste and gel from the chia seeds.

Grease a baking tray with the coconut oil and spread the bar mixture evenly into the tray.

Bake for approx. 35 mins, or once the top turns golden.

Once you have removed the bars from the oven top with the melted chocolate drops (if using).

Let it cool for approx. 15 mins before slicing into 16 bars.

Store in the fridge and serve with fruit.
